Do different yeasts make more stable haze?
Based on experience, we know that some strains produce a more stable haze in NEIPA style beers than others. Ongoing research is helping to clarify and understand why some yeasts are "haze positive" while others are "haze neutral".
Which Escarpment yeasts make more stable haze?
In our experience, Foggy London Ale is the easiest yeast to produce a stably hazy beer with. Beyond it, many other strains are highly compatible with hazy beers. This includes Ebbegarden Kveik, Hydra, Pomona, Pink Boots Yeast, and several others.
