Homebrew - Bloated Pouch
My yeast pouch is bloated/swollen! Is the yeast OK?
Some of our homebrew pouches are prone to bloating over time. This also can happen when the yeast experiences temperature swings. As long as the pitch is not expired, it should still perform as normal. If in doubt, make a starter.
Some yeast strains such as Foggy London Ale, Cali Ale, and Brettanomyces produce pressure over time even when stored cold and all residual sugars are consumed. Early research indicates this has to do with genetic differences in how these strains manage their storage carbohydrates (glycogen and trehalose). We are continuing to investigate this phenomenon.
